Michelin Star Chef Lunch with Chef Jarad Gallagher at Sana Sini Pullman Jakarta

This is actually a late post from me. I've been so unwell for the last view weeks. And make me have to stay in bed for a view days. But eventhough this post is a late post, I can't miss to show you guys this amazing Michelin Star Chef that Sana Sini Pullman Jakarta bring to Jakarta a weeks ago. After my post a view month ago about Sana Sini Pullman Buffet Restaurant , now I come back here for another event.

Why I said this is a very late post? Because this Michelin Star Menu only served from 17th - 22nd June 2014. Huhuu... Michelin is like the highest achievement in Culinary World. So when Sana Sini Pullman invited me to taste the 3 course from the Michelin Chef, I drag my self to come here.

Meet Jarad Gallagher, the head Chef of the famous Chez TJ restaurant in the US. He came to Jakarta to cook in Sana Sini open kitchen. His a Seattle native, began cooking in a very young age. With his strong passion for French cooking, he took an intensive training classes at Le Cordon bleu in Paris and London. This led Jarad obtaining work at the acclaimed Bras Restaurant in Laguiole, France. He then to work at Michelin starred restaurants Michael Mina, One Market and Plumed Horse before moving to his current home Chez Tj in San Fransisco, California.


Textured Beef Tendon - Quail Egg Yolk - Romesco Sauce
A very unique appetizer begin our lunch journey. Looked like Chef Gallagher want to play wit our palate. Because it has all texture in just one plate. We got the softness from  the quail egg and the crispy texture from cheese crackers. And also the fish roe add a li'l bit crunchy texture. The chef come to our table and poured the asparagus velouté (velouté is a special French sauce)  to our plate one by one. This is so interesting. Very freshening for a start.


Garden Roots - Caraway - Spinach
This lamb was heavenly great. I was drooling my eyes, lickin' my fork, and eat with slow motion to really enjoy this Lamb. No, I'm not over reacted or become super "lebay" in picturing this dish. Well, this is because, once I had Lamb menu but it got smell really bad. But this lamb was perfectly cooked! it so tender, juicy and marinated well. Served with brown gravy sauce. The caraway also still crunchy. Love to death every element in this plate.

Caraway: is similar in appearance to other members of the carrot family, with finely divided, feathery leaves with thread-like divisions, growing on 20–30 cm stems (taken from Wikipedia )

Beside the Coffee Flavored Rack Of Lamb, you can choose SEA TROUT "MI CUIT"

Mint - Avocado - Orange 
Before we move to dessert, we given palate cleanser to giving back a balance to our palate. A bitter, tangy mixed together.

Coconut Sorbet - Caramel - Milk Chocolate
Again... heaven on earth! The milk chocolate is so melted in my mouth. Even though it full of chocolate, but the taste was not too sweet. The coconut sorbet also so smooth served with vanilla granule that really great pairing with the milk chocolate. Not too forget the caramel crisp. It really a sweet ending!

You can have the menu that cooked with Chef Jared Gallagher him self with price Lunch starts at IDR 288.000++/person and dinner (six courses) starts at IDR 888.000++/person.

SKYE - Introduce Hamish Lindsay

A view weeks ago, I was invited to taste a set menu from their new Executive Chef, Hamish Lindsay. Hamish who is originally Auckland, New Zealand, joined SKYE in early October 2013. Now, he is so ready to take us to the sky high of SKYE.

Speaking of SKYE, I bet some of you guys already know about SKYE for a long time. It first took us to sky in June 2012. Since then, SKYE who is served international cuisine rockin' the Jakarta's dining experience.

Located in 56th floor rooftop of BCA Tower - Grand Indonesia, Thamrin, SKYE have breathtaking view for the outside area. If it not rain, just take a seat beside their pool or their outside chairs. It feel like seating in the clouds among the skyscraper.

The best time to enjoy the outside area is after 4pm. Because you know Jakarta weather, hot like in the oven. I suggest that you make a reservation if you want to get the best seat outside. Because it often full packed. Specially at weekend. SKYE have a strict rules regarding the professional camera using. But if you just want being narcissistic with your friends or just doing selfie, then take it a lot of pictures of you guys. Because the view here really fantastic!

Moving on their dining area, the rustic modern and elegant. With a big window on the side, you still can see the skyscraper when you dine here.

Before we taste Hamish Lindsay menu, we served with SKYE's canapes, while waiting other guests coming to the venue.

All canapes above taste nice. But from the 3 above, I like the Duck Spring Rolls most. The duck is tender and seasoning well. And also the skin is so crunchy and crispy.

To accompany the canapes,there's also Apple Virgin Mojito. Love the acidity. So great for the hot weather outside. So freshening.

Now let's have take a look more closer the Hamish Lindsay's menu. I bet you can't hardly wait can Hamish Lindsay creat with his magic hands.


Baby Romaine Lettuce, Crispy Soy Chicken, Sesame Mustard Dressing
An Asian twist for starter. The chicken is very tender combine with the crispiness and the freshness from the romaine lettuce. The taste of the sesame mustard dressing is very balance, not too overpowering.

Heirloom Tomato, Olive Salsa, Basil
Love this souffle. The cheese not too overpowering. It balance with the freshness from the heirloom tomato, olive salsa and basil. The souffle is so smooth. It's like melted in your mouth in suddenly. Nice!

Parmesan Mousse, Rocket Salad, Truffle Oil, Crispy Capers, Black Pepper Tuile
The freshness from the beef seared is so amazing. It so light and tender. The tuile and rocket salad add the crispy texture in to it. Too bad, the foie gras a bit lost with the truffle oil.


Squid Ink Pasta, Assorted Seafood, Spicy Garlic, Tomato Sauce
A simple dish with great taste. The squid ink pasta cooked aldente, the seafood taste fresh and not smell fishy, it blend so well with the tomato sauce. The sourness make the seafood taste even more delicious.

Chilli Jam, Cherry Tomato, Long Beans, Thai Basil
If you like spicy taste, then you have to try this one. Fresh seafood with chilli jam really can wake you up. Like the way they cook the long beans. It still have the crunchiness texture in it.

Broccoli, Cauliflower, Bread Crumbs, Almonds, Cherry Tomatoes, Lemon
Seabass cooked really nice. It has the right texture. Still moist in side and taste crisp on the skin. The breadcrumb and the almonds add more crunch texture to the seabass.

Truffle Potato Puree, Green Peppercorn Sauce, Crispy Fries with Truffle Salt
This one is the very fantastic way to end our main courser journey. The tenderloin is so juicy and cooked to medium. The taste is insanely good. It so melted in my mouth. Don't forget the potato puree. It has the right consistency. The thickness is just right.


Strawberry & Thyme Granita, Pistachio Tuile
An unique combination and twist kind of dessert. Really suit with the hot weather. The tangy and sourness from the strawberry & thyme granita sorbet really blend well with the creamy, sweet and smooth peanut butter panna cotta. Some kind like yin and yang.

Coconut Whipped Cream, Passion Fruit Sauce, Coconut Tuile
If you like sour taste for your dessert, then you have to try this mango cheesecake. I think the cheese not too overpowering. Probably it balance with the tangy taste from the passion fruit sauce. Another thing that I like is the coconut tuile. Thin crisp nice for snacking.

Lemon Vanilla Sauce, White Russian Ice Cream, Almond Brittle
Sticky Date pudding served warm. Become not too overwhelmed because of the lemon vanilla sauce. The warmness combine with with the cold from the ice cream make this dessert like playing in my mouth.

Overall, Chef Lindsay really did a fantastic job with the menu. Every menu, have its surprise. A twist between Western and Asian has become a major success.Thanks SKY & Ismaya for having me that day.

Authentique - For the Fresh Made Bakery

It's been a while since I went to Authentique French Bakery with my friend Aline. Why I pending this post too long? It just because at first we plan to back to Authentique French Bakery again a very soon. But too bad, we never got a chance again to go back. So I guess I don't have a ny reason to postponed it again.

A bit tricky to  get to Authentique French Bakery. If you already at Kemang Raya Street, you just need to find Hero Kemang that located at Kemang Selatan 1. From the facade, the place look petite but really eye catching. With 2 Vespa that wrote Authentique infront of the entrance. Stepped in to the terrace, there are some chairs that maybe fit for 7 people only. I believe this area this meant for smoking area.

Stepped in to the Authentique French Bakery area, again, the are only several place to seat. Perhaps it only fit no more than 12 people. So, instead of dine in, peoples who don't get seat, but don't want wait too long can take away their orders.

But luckily for us, we got a seat infront of theiir bakery display. even though the place not too spacious, but it bright enough to make it look spacious. With a petite colorful decor make this place so cheerful. So confuse, what to order, since a lot of bakery and other meals that look tempting to order. Plus... the smell of the freshly made of bakery really make me even more hungry.

Since it still 10am, and we haven't breakfast yet. So, we order something that can make my morning mood boost.

The bread was dry but moist at the same time. Filled with beef ham (choice of beef or pork) make this croque madame sooo damn tasty. Topped with cheese on the bread and also topped with sunny side egg that looked bright like the sunshine.

Once I had this, the taste pretty good. The meringue inside is crunchy and not too sweet. The sweet flavor comes from the chocolate that cover all over the meringue. Outside the chocolate there's still chocolate rice (meises) that covered all over the ball. Loved the crunchy texture. Too bad, they don't serve this Meringue Ball any longer.

A half Dozen Of Big Canele - IDR 80.000
Always interesting in French cookies and bakery. And when I saw this Canele, it so hard not to grab one. So I grab 2 small canele. The burn texture from the caramel outside not taste bitter. When I bite it, the chewy texture from the canele and the crunchy texture at the outside really play in my mouth. It blend with the smoothness from the custard inside. What I like from this canele is the taste is not too sweet.

Like I said earlier, Authentique served many kind of bakery that freshly made. Not just the bakery, but they also serve macaroon, pies and other tempting products. Next time I visit Authentique again, I definitely will grab some of them.

Just like feel at home here at Authentique. Nice and friendly service. Family business never goes wrong. Always make the customers feel comfortable. Specially with their homemade dishes.
